I made these healthy and very easy Chicken Potstickers to go along with our Slow Cooker Chicken Teriyaki last week.
They are so tasty and a great compliment to Asian meal you are cooking.
I actually had leftover filling and ate it for healthy lunch served over rice.
INGREDIENTS
1 package wonton wrappers (found in the produce department of most grocery stores)
1 pound ground chicken
sesame or coconut oil
1.5 cups of pre-packaged broccoli slaw
2 cloves garlic, minced
1 tablespoon freshly grated ginger
1 tablespoon soy sauce
pepper to taste
soy sauce for dipping
DIRECTIONS
Cook chicken in a large skillet over medium high heat until completely done. Drain off any fat.
Return chicken to pan and add broccoli slaw to pan. Cook for 5 minutes or until the vegetables are softened.
Add garlic, ginger, soy sauce and pepper. Cook for an additional 2-3 minutes
Stir in crushed red pepper if using
Lay out wonton wrappers on a flat surface, a few at a time. Moisten the edges of the wonton wrappers with water using your fingers or a pastry brush.
Spoon about 1 tablespoon of the ground chicken mixture into the center of each wonton wrapper.
Fold won ton wrapper so that it forms a triangle. Gently press the edges to keep the pot stickers from coming apart while cooking.
Heat 2 tablespoon of oil in a large skillet over medium heat. Add the potstickers in a single layer and cook about 2-3 minutes on each side or until golden.
Serve with soy sauce for dipping if desired.
