MICROWAVE PB&J CAKE

Two comfort foods walk into a bar, and join together to make the ultimate comfort food: PB&J Cake. These cakes have all of the warm and fluffy comforts of a homemade PB&J sandwich with the sweet deliciousness of a birthday cake. You really couldn’t ask for a better, more comforting dessert.

This cake is made in a mug which, you have to agree, is ridiculously cute and nice that it’s so self contained. You literally end up with a cup and a spoon to wash instead of tons of different bowls and mixing instruments. Let’s be real, you probably wouldn’t have washed them anyway, but whatever.

SERVE MICROWAVE PB&J CAKES WITH

Do you even need to ask? Ice cream! It’s cold, it’s sweet, it’s creamy, and it’s the perfect BFF for a peanut butter cake. You can serve it with vanilla ice cream to go the classic way, or you can play it fast and loose and serve it with chocolate ice cream. The peanut butter and chocolate are amazing together.

VARIATIONS ON PB&J CAKES

• Peanut Butter: You can use different kinds of peanut butter to get different textures. If your use chunky peanut butter, it’s like you’ve already mixed in crushed nuts, but you don’t have to do any of the work. If you use creamy peanut butter, you’ll get a rich, buttery consistency but less crunch. Like the name would suggest.
• Toppings: Take some peanuts, put them in a bag, smash the bag violently against a wall or under a book, then sprinkle the crushed nuts over the top. You can also frost your cakes with a frosting tube from the store, or even take actual peanut butter and spread it across the top. Something that’s also fun is to pour a bunch of chocolate chips on the top to get a peanut butter cup experience.

PLATE IT UP

It’s hard to beat how cute cake looks in a mug, so you absolutely can just serve them with a spoon in the mug. Or, you can transfer them into a bowl, frost the top with Cool Whip or frosting, and crunch up some peanuts to sprinkle on top. Voila! You are now the hero of dorm room cake decorators everywhere!

If there are still mugs of cake left, it just means that you need to invite over some more friends. Or make some more friends. To save your leftovers, cover the top of the mug with some plastic wrap and put it in the fridge. The cake will stay good for up to 4 days, and you can munch on it later when you need a study snack.

COST FACTOR

$: It may look like there’s a lot of ingredients in this cake, but everything on the list is fairly inexpensive and you can find it pretty much anywhere. The cake mix can run you a little extra if you go for the super fancy stuff, but you can get fairly basic, but still tasty, cake mix for not very much.

MICROWAVE TABLE

• 1,000 watts or higher: Higher wattage, lower cook time. Our microwave is about 1,250 watts, but if you have one with about 1,000 watts you will want to cook each mug of cake for about 1:30.
• 700 watts: Microwaves under about 900 don’t heat things evenly or consistently, so don’t go anywhere while you’re cooking. Cook each cake in a mug for about 2:09 but keep an eye on it.
